Infuse is a book of recipes and ideas for making infused water drinks. The author, Eric Prum, provides the reader with ideas ranging from crisp to sweet.The whole idea behind water infusions is hydration, followed by the benefits of the liquids and antioxidants from fresh fruits and vegetables. The body absorbs them from foods better than from pills. Some people are more likely to stay hydrated if their water has some flavor to it.While there are a lot of ideas and interesting combinations in this book, infused water isn't for me. I don't like my water to taste like anything at all. Not cucumbers, or mangoes or whatever. I like my water to taste wet. If I wanted the taste of cucumbers, I'd just go and eat some cucumbers.Disclaimer: I received a free copy of this book in exchange for writing an honest review. Easy, basic recipes..a lot of "combine ingredients and shake" directions. I was hoping to learn a bit more about the science and chemistry behind infusing but the book is really just simple recipes with nice photographs. Many of the infusions are not meant to last more than a few weeks which was disappointing. I purchased the kindle edition and found the layout to be very poorly designed..paragraphs would break in odd places leaving most of the page blank, pages would change when flipping back and forth, pictures paired with wrong recipes etc.
I'm so disappointed. The majority of these recipes call for no more technique than "shake in a mason jar." I count three syrups, a couple of overnight cold brews, and one buttered popcorn recipe. How is this a book about infusions? I wanted to legitimately infuse herbs and favors into shelf stable oils, vinegars, syrups and more. I wanted to know how sugar, salt, fat, time and temperature will affect the flavor and shelf life of my infusions. I want to know how to get the most flavor out of my fresh ingredients, and to preserve those favors all year. The recipes here won't keep more than three months, if that!Adding insult to injury, the writing is poor. The phrase "we've been known to..." appears frequently enough that you can see the authors are a little too proud of themselves at the moment.I will say the bourbon peaches look delicious, and there are a few other things I'll try. That's the only reason I gave it a second star. Otherwise, the hour it took me to read this book would have been better spent finding recipes on Pinterest. Also, I want my money back.
Pretty pictures, but the writing leaves a little to be desired. Serves better as a coffee table book for guests to flip through than an actual study of infusing oil/water/booze.
Attractive, good for display and use. The authors make infusing fun. Very good photos accompany good fonts and display. The top will fit common Mason jars.
Great resource and some interesting recipes. I've already infused some vodka using the instructions in the book (although I did my own flavors). I wish there was a companion book to this with recipes for foods that can be made with different oil infusions. I have their other book "Shake" which can be used with some alcohol infusions. Crossing my fingers for a recipe book for food soon!
I love this book! It starts with the basic how to's, and then advances to the recipes. Then it even gives you ideas on how to expand your ideas and what best pairs with them. Excellent addition to anyone's personal library.
Nice book--although reading other reviews about the screw mason jar pour lid--seems expensive for a lid that leaks. The pictures in the book are very pretty and recipes are simple--which for me is good.
What a fun book. Infusion projects abound from fruit to olive oil to alcohol.
